Tiramisu is one of those timeless favourites, a classic Italian dessert that is a perfect sweet treat for any occasion. We love this recipe and hope it becomes a favourite in your household too.
Ingredients
- 2 cups of strong black coffee (We used the Jamaica Blue Signature Blend)
- ½ cup of Marsala (you can alternatively use coffee liqueur)
- 3 eggs separated
- 1/3 cup caster sugar
- 250g mascarpone
- 300ml thickened cream, lightly whipped
- 1 large packet of sponge fingers
- Cocoa (to dust)
Method
Pour the coffee and marsala into a shallow dish and set aside for later.
Beat the egg yolks and sugar in a large bowl with electric beaters until the mixture appears pale and thick. Add the mascarpone and whipped cream, continue to mix until it is just combined.
Beat the egg whites in a medium bowl until soft peaks form. Gently fold the eggwhites into the mascarpone mixture.
Dip biscuits into the coffee mixture to cover the base of a 20cm dish. Cover the biscuits with 1/3 of the mascarpone mixture. Repeat the layers ending with the cream. Cover with plastic wrap and refrigerate for 2 hours.
Serve dusted with cocoa
