Are you looking for the perfect snack to take to work… whilst obviously of course fuelling your coffee addiction? Look no further, this is the perfect tasty snack to tide over that 3pm sugar slump.
Ingredients
- 2 cups self-raising flour
- ¾ cup brown sugar
- ½ cup chopped walnuts
- 1 teaspoon nutmeg
- ½ cup dark chocolate chips
- 1 shot of espresso coffee (BeanGiving Espresso Blend)
- 1 egg lightly whisked
- 1 cup buttermilk
- 1/3 cup of vegetable oil
Method
Preheat oven to 180C (160 fan forced) and line a muffin tin with muffin cases. Combine flour, sugar, walnuts, chocolate chips and nutmeg in a large bowl.
Whisk coffee, egg, buttermilk and oil to combine. Add to the flour mix and stir until all is just combined (make sure not to over stir).
Divide mixture evenly between the muffin tin. Bake for 20 to 25 minutes or until a skewer when inserted in the centre comes out clean. Transfer to a wire rack to cool slightly.
