Cooking with Coffee

We are true believers at Bean Giving that you can never have enough coffee in the morning! This coffee infused granola recipe is great to make ahead and perfect for mornings on the go.

Ingredients

  • 3 cups of traditional rolled oats
  • 1 cup of raw cashews or other nut of your choice
  • ½ cup of pepitas
  • 1 teaspoon of cinnamon
  • 1 teaspoon of ground ginger
  • ½ teaspoon of nutmeg
  • ½ cup of desiccated coconut
  • ¼ cup of honey
  • ¼ cup of strong brewed coffee
  • ¼ cup of rice bran or coconut oil
  • 1 teaspoon of vanilla extract
  • Honey, berries, yoghurt and milk to serve

Method

  • Preheat oven 180°C/160°C for fan forced. Line large baking tray with paper
  • Place oats, cashews, pepitas and spices in a large mixing bowl and mix to combine
  • Spread out on tray
  • Combine honey, coffee, oil and vanilla in a bowl
  • Drizzle mixture over the oat mixture
  • Bake for 20 to 25 minutes, make sure to shuffle at least once during the cooking process
  • Sprinkle desiccated coconut over the oat mixture and cook for a further 5 minutes
  • Remove and set aside to cool completely
  • Granola can be stored in an airtight container for up to three weeks
